  • Cookies
    • 1 3/4 cups (210 grams) all-purpose flour
    • ¾ cup (150 grams) granulated sugar
    • 4 Tbs unsalted butter, room temperature
    • 1 large egg
    • 1 tsp pure vanilla extract
    • 1 tsp baking powder
    • 1/2 tsp salt
    • ½ tsp ground nutmeg
  • Glaze
    • 2 cups powdered sugar
    • 2 Tbs meringue powder
    • 2-3 Tbs water
    • 1 cup rainbow sprinkles


  1. In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and sugar until light and fluffy. Scrape down the sides of the bowl. Add the egg and vanilla and beat to combine. Scrape down the sides of the bowl.
  2. With the mixer running on low speed, add the flour, baking powder, nutmeg, and salt. Beat to combine.
  3. Shape the dough into a disk and wrap in plastic. Chill in the refrigerator for at least 1 hour or overnight.
  4. Preheat oven to 350 degrees F. and line 2 baking sheets with parchment paper.
  5. On a lightly floured work surface, roll the dough to ¼ inch thickness. Cut your shapes and place them on the prepared baking sheet ½ inch apart.
  6. Bake for 12 to 15 minutes, or until the cookies are a light golden brown around the edges.
  7. Transfer the cookies to a wire rack to cool.
  8. While the cookies are cooling, prepare the icing by combining the powdered sugar and meringue powder. Add enough water to make a thin icing that you can dip the cookies in.
