  • Muffin
    • 2/3 cups (135 grams) granulated sugar
    • 1 large egg
    • 1/2 cup (115 grams) canola oil
    • 1/3 cup (80 grams) whole milk
    • 1 tsp pure vanilla extract
    • 1 Tbs poppyseeds
    • 1/4 cup fresh lemon zest (4 lemons)
    • 1 1/4 cup (150 grams) AP flour
    • 1 tsp baking powder
    • 1/4 tsp salt
    • 1/2 cup (120 grams) sour cream or plain yogurt
  • Glaze
    • 1 1/2 cups (170 grams) cup powdered sugar
    • 4 Tbs (60 ml) lemon juice


  1. Preheat oven to 375 degrees F. and line 7 muffin wells with paper liners.
  2. In a medium size bowl, combine the sugar, egg, oil, milk, and vanilla. Stir until well combined. Add the poppyseeds and lemon zest and mix well.
  3. Mix together the flour, baking powder, and salt. Add to the wet ingredients. Stir until combined.
  4. Stir in the sour cream just until well distributed.
  5. Evenly distribute the batter into the muffin wells, filling each one to the top.
  6. Bake the muffins for about 20 minutes or until a toothpick comes out clean.
  7. Mix together the ingredients for the glaze, add the lemon juice until the desired consistency is reached. Pour glaze over the warm muffins.
