Ingredients

  • Crust
    • 1 1/2 cups AP flour
    • 5 Tbs sugar
    • 1/2 tsp salt
    • 1/2 cup extra virgin olive oil
    • 2 Tbs water
  • Apple compote filling
    • 4 lbs apples (about 10), peeled, cored and cut into 1-inch chunks
    • 3 Tbs unsalted butter, cut into ¼-inch pieces
    • 1/4 cup plus 2 Tbs light brown sugar, packed
    • Ground cinnamon (optional)
  • Apple topping
    • 3 to 4 apples
    • juice of 1/2 lemon + 1/2 cup water
    • 1 Tbs unsalted butter, melted
    • 3 Tbs sugar
  • Glaze
    • 1/3 cup apricot jam

Directions

  • Crust
    1. Preheat the oven to 350 degrees F.
    2. Whisk flour, sugar, and salt together in a bowl.
    3. Add oil and water and stir until uniform dough forms.
    4. Using your hands crumble ¾ of the dough into a 9 inch tart pan with a removable bottom. Press dough evenly into pan and around the sides. Reserve the remaining dough to fill in any thin areas or holes after blind baking.
    5. Line the tart shell with aluminum foil and bake on a rimmed baking sheet for 20-25 minutes until lightly brown. If the dough puffs up while baking, gently press it back into the pan with an offset spatula or similar tool. If necessary, repair any cracks with the remaining raw dough. Cool slightly while you prepare the apples.
  • Applesauce
    1. Preheat the oven to 400°F.
    2. Core and chop the apples into chunks. Place the apples in a 9×13-inch baking dish.
    3. Scatter the brown sugar and butter pieces evenly over top. Cover tightly with aluminum foil and bake for 45 to 50 minutes, tossing once halfway through, until the apples are very tender.
    4. Mash the apples with a potato masher or fork. Taste; if the applesauce is too tart, add more brown sugar little by little until the flavors are balanced. (Note that no two batches will ever be the same; the flavor will depend on the tartness of the apples you use.)
    5. Transfer to a blender and blend till smooth.
  • Assemble the Tart
    1. Preheat the oven to 350 degrees F.
    2. Spread the applesauce in a thick layer over the bottom of the tart crust.
    3. Slice the apples into thin slices with a sharp knife or mandolin, letting them soak in the lemon and water to soften before using.
    4. For the rose pattern start at the edge of the crust lay the apple slices overlapping in concentric circles.
    5. Brush on the melted butter and sprinkle the sugar all over the apples. Bake on a parchment lined baking tray at 350F for 40-45 minutes till the crust turns golden and the apple slices are soft.
  • Glaze
    1. Warm the jam and gently push the jam through a sieve to remove any pieces of fruit for a smooth glaze.
    2. Once the tart is baked, brush a thick layer on top of the apples while the tart is still warm. If your jam is very thick you can add a little water to thin it before glazing.
