Sweet Ricotta Pancakes

Stephanie makes from-scratch ricotta pancakes that are simply irresistible!

On this episode, Stephanie uses her own homemade ricotta to make everyone’s favorite breakfast: Ricotta Pancakes! These delicious fluffy treats will get everyone out of bed for breakfast in no time. You’ve got to give this one a try!


  • 1 cup ricotta cheese
  • 3/4 cup buttermilk
  • 2 eggs
  • 2 tsps vanilla extract
  • 1 cup AP flour
  • 4 tbsps sugar
  • 1 1/2 tsp baking powder
  • 1/4 teaspoon salt
  • butter
  • maple syrup


  1. In a large bowl, mix the ricotta cheese, buttermilk, eggs, and vanilla until combined.
  2. Carefully fold in the flour, sugar, baking powder, and salt until just combined. Do not overmix.
  3. Heat skillet over medium heat (325 degrees for electric skillet). Brush melted butter over skillet and ladle ½ cup portions of batter onto heated skillet.
  4. Flip the pancakes when you see bubbles and the outer edge of the pancake is no longer shiny (approximately 2-3 minutes).
  5. Brown on the other side (approximately 1-2 minutes).
  6. Serve warm with butter and warmed maple syrup.
  7. Enjoy!
